Enameled cast iron cookware is covered with a glassy enamel coating that today is offered in many different colors. The enameled cast iron cookware pieces include dutch ovens, casseroles roasters, skillets pots and pans.
Enameled cast iron cookware has its advantages over bared cast iron cookware. You do not have to worry about seasoning this cookware. Enameled cast iron cookware is very good for baking and roasting. Cooking acidic foods such as tomatoes and other acidic ingredients that usually react unfavorably with cast iron seasoning is not a problem because of the enamel coating. The enameled cast iron cookware is great for marinating, can be refrigerated and can even be kept in the freezer for later cooking. Because the cast iron surface is enameled, it does not react with moister in the air and therefore will not rust. Enameled cast iron cookware does not release iron into the food.
The main disadvantage is cost. Enameled cast iron cookware is much more expensive than natural or preseasoned cast iron cookware. Care has to be taken with the enameled cast iron cookware so as not to chip the surface.
Enameled cast iron cookware can be cleaned with detergent, for a more thorough cleaning. This kind of cookware, in most cases, is dishwasher safe.
